Tagine takes time, and Friday is couscous day

A real tagine cooks slowly, so restaurants that bring one out in five minutes reheated it; the good ones ask you to order ahead or wait. Couscous is traditionally the Friday family meal, and many places serve it only that day. Breakfast is msemen flatbread with honey and mint tea, poured from a height. In Fez and Marrakech, the best meals are often in riads with a few tables and a set menu; book the day before. Alcohol is served in licensed restaurants and hotels, not in the medina cafés.
