Vietnamese eat pho in the morning; the famous shops sell out by 10. Sit on the low plastic stools at the sidewalk stalls where the locals are, and point at what the next table has. Hanoi has bún chả (grilled pork with noodles) and egg coffee; Ho Chi Minh City has broken rice (cơm tấm) and bánh mì on every corner; Hue has bún bò Huế and royal dishes; Hội An has cao lầu noodles made only there. Carry small notes; stalls rarely have change for big ones.
