Night markets are dinner, and the lines are the menu

Taiwanese eat at night markets, and the right way is to graze: a stinky tofu here, a pepper bun there, oyster omelet, scallion pancake, and a bubble tea between stalls. Follow the longest lines. Raohe and Ningxia in Taipei are good and compact; Shilin is the famous one. Breakfast shops serve soy milk, youtiao fried dough, and egg crepes from dawn. Beef noodle soup is the national dish; no tipping anywhere.
